
If there’s one dish I eat in rotation, it’s this Avocado and Tomato salad recipe. Not only is it visually pleasing and easy to make, it’s packed with lots nutrients, making it the perfect healthy addition to your weekly diet.

Honestly, this salad goes with practically everything. Avocado is so versatile, tomato adds a Mediterranean twist and sweet corn gives it sweetness. Serve this along with grilled chicken.
How To Make An Avocado & Tomato Salad Recipe
Avocado & Tomato Salad
Ingredients
- 1 tbsp extra-virgin olive oil
- 1 lemon juice
- 1/4 tbsp ground cumin
- 3 avocados cubed
- pinch of salt & black pepper
- 1 pack cherry tomatoes halved
- 1 can sweet corn microwave for 1 min
Instructions
- To prep, slice the cherry tomatoes and cube the avocado. Microwave sweet corn for 1 minute, or serve cold, if you like
- In a bowl, mix together the olive oil, lemon juice and cumin
- Combine the avocados, tomatoes, corn to your oil and lemon juice mix
- Sprinkle some salt & black pepper to your taste and serve immediately
I just can’t get enough of this recipe 😍 – I’ve made it over 10 times and try to incorporate it to my weekly diet. It goes perfectly by itself if you want something light, however for a main meal, serve it with some grilled chicken, or fried cod.
How Long Does This Recipe Keep?
Although Avocados have a reputation for going brown quickly, I would suggest serving this dish immediately. The lemon juice sprinkled on the salad helps to prolong the browning, but only for a while.
If you’d like leftovers, toss everything except the avocado and refrigerate for up to a day. Then, add the avocado right before you’re ready to serve.

- 1/4 tablespoon of ground cumin
- 2-3 avocados, cubed
- A pinch of salt and black pepper, taste to your liking
